Ingredients
- 750g chicken strips
- ½ Tbsp. olive oil
- 1 x clove crushed garlic
- 1 x tsp. grated ginger
- 1 x spring onion
- ½ finely diced capsicum
- 1 x small finely diced zucchini
- 1 x tsp. ground coriander
- 250g English spinach
- 100g mung bean sprouts
- 2 x Tbsp. light gluten-free soy sauce
- 1 x tsp. chicken salt or chicken-powered stock 3 cups of cooked rice, preferably long-grain
