Ingredients

  • 750g chicken strips
  • ½ Tbsp. olive oil
  • 1 x clove crushed garlic
  • 1 x tsp. grated ginger
  • 1 x spring onion
  • ½ finely diced capsicum
  • 1 x small finely diced zucchini
  • 1 x tsp. ground coriander
  • 250g English spinach
  • 100g mung bean sprouts
  • 2 x Tbsp. light gluten-free soy sauce
  • 1 x tsp. chicken salt or chicken-powered stock 3 cups of cooked rice, preferably long-grain
